You can control which tracks are transferred between computers during synchronzation by using the Block and Pin tools.

A track which is Blocked is prevented from being transferred onto your computer. You can only block tracks which reside on Remote iTunes libraries. |

A track which is Pinned is prevented from being removed from the iTunes library on your computer, even when it is removed from iTunes on other computers. You can pin tracks which are in the track list for the local iTunes computer. |
You can pin or block tracks by selecting one or more tracks in the track list and then choosing the Pin menu option from the main menu.
Tracks which are blocked or pinned will be indicated by the block or pin icon in the track list.
Syncopation provides several other ways to control which tracks are syncrhonized including Playlists, file types, and the synchronization preview panel.
